Ingredients

  • 4 fillets Salmon skinless
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 4 cups Mixed Greens
  • ¼ cup Red Onion thinly sliced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Preheat the grill pan over medium-high heat.
  2. 2. Season the salmon fillets with salt and pepper.
  3. 3. Grill the salmon for about 4-5 minutes on each side, until fully cooked.
  4. 4. In a mixing bowl, combine cherry tomatoes, cucumber, mixed greens, and red onion.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. 6. Drizzle the dressing over the salad and toss to combine.
