  • 2 cups Sauerkraut drained
  • 1 cup Carrots shredded
  • 1 cup Bell Pepper chopped
  • 1 tablespoon Olive Oil
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Instructions 

  1. In a large mixing bowl, combine the sauerkraut, shredded carrots, and chopped bell pepper.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, sugar, salt, and black pepper.
  3. Pour the dressing over the sauerkraut mixture and toss to combine.
  4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
