Shrimp and Pasta Shell Salad

Main Ingredients
- 8 oz pasta shells uncooked
- 1 lb shrimp cooked and peeled
- 1 cup cherry tomatoes halved
- ½ cup red onion diced
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh parsley chopped
1. Cook pasta shells according to package instructions. Drain and set aside.
2. In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, and red onion.
3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
4. Pour the dressing over the pasta mixture and toss to coat evenly.
5. Garnish with chopped parsley before serving.
