Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 cup Cooked rice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 4 large Flour tortillas

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat. Add the shrimp, chili powder, cumin, and garlic powder. Cook until shrimp are pink and opaque, about 5 minutes.
  2. 2. In a mixing bowl, combine the cooked rice, black beans, and corn.
  3. 3. Lay out the tortillas and evenly distribute the shrimp, rice mixture, lettuce, and tomatoes among them.
  4. 4. Roll up the tortillas, folding in the sides as you go, to form burritos.
