Ingredients

  • 2 lbs beef chuck cut into 1-inch cubes
  • 1 cup red wine
  • 2 cups beef broth
  • 1 cup carrots sliced
  • 1 cup pearl onions peeled
  • 4 cloves garlic minced
  • 2 tablespoon tomato paste
  • 1 teaspoon thyme dried
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 oz mushrooms sliced

Instructions 

  1. 1. Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides.
  2. 2. Transfer the beef to the slow cooker. Add the red wine to the skillet, scraping up any browned bits, then pour into the slow cooker.
  3. 3. Add the beef broth, carrots, pearl onions, garlic, tomato paste, thyme, salt, and pepper to the slow cooker. Stir to combine.
  4. 4. Cover and cook on low for 8 hours, or until the beef is tender.
  5. 5. About 30 minutes before serving, add the mushrooms to the slow cooker. Stir and continue to cook until mushrooms are tender.
