Slow Cooker Oxtail Stew
A hearty and flavorful oxtail stew made easy in a slow cooker.

Main Ingredients
- 2 lbs Oxtail
- 2 cups Beef Broth
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 tablespoon Tomato Paste
- 2 teaspoon Thyme dried
- 2 teaspoon Paprika
- 1 teaspoon Salt or to taste
- 1 teaspoon Black Pepper or to taste
- 2 cups Carrots sliced
- 2 cups Potatoes diced
1. Season the oxtail with salt and pepper.
2. In a large skillet, brown the oxtail on all sides.
3. Transfer the oxtail to the slow cooker.
4. Add the chopped onion, minced garlic, tomato paste, thyme, paprika, carrots, and potatoes to the slow cooker.
5. Pour in the beef broth.
6. Cover and cook on low for 8 hours or until the meat is tender.
7. Serve hot and enjoy!
