Smashed Cucumber Salad

Main Ingredients
- 2 large cucumbers smashed and cut into bite-sized pieces
- 1 teaspoon salt
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 tablespoon sesame oil
- 1 teaspoon chili oil optional
- 1 tablespoon sesame seeds toasted
1. Smash the cucumbers with the side of a knife and cut them into bite-sized pieces.
2. Place the cucumbers in a bowl and sprinkle with salt. Let sit for 10 minutes.
3. In a small bowl, mix garlic, soy sauce, rice vinegar, sugar, sesame oil, and chili oil.
4. Drain any excess water from the cucumbers and add the dressing. Toss to coat.
5. Garnish with toasted sesame seeds and serve immediately.
