South African Melktert Recipe
A traditional South African milk tart with a creamy filling and a hint of cinnamon.

Crust
- 1 cup flour
- 1 tablespoon sugar
- 0.5 cup butter cold and cubed
- 1 egg yolk
Filling
- 4 cups milk
- 1 cup sugar
- 3 tablespoon flour
- 3 tablespoon cornstarch
- 3 eggs beaten
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon for dusting
Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar for the crust. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolk and mix until the dough comes together. Press the dough into a pie dish and bake for 15 minutes or until golden brown.
In a saucepan, heat the milk until it is just about to boil. In a separate bowl, mix sugar, flour, and cornstarch. Add the beaten eggs and vanilla extract to the dry ingredients and mix well.
Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
Pour the filling into the baked crust. Allow to cool, then refrigerate until set. Dust with cinnamon before serving.
