Ingredients 

Main Ingredients

  • 8 oz Pasta any type
  • 1 tablespoon Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Black beans cooked or canned, drained and rinsed
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 1 cup Salsa
  • ¼ cup Cilantro chopped
  • 1 Avocado sliced, for garnish

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes.
  3. 3. Add garlic, bell pepper, and corn. Cook for another 5 minutes.
  4. 4. Stir in black beans, chili powder, cumin, salt, and black pepper. Cook for 2 more minutes.
  5. 5. Add cooked pasta and salsa to the skillet. Toss to combine and heat through.
  6. 6. Remove from heat and stir in chopped cilantro. Serve with sliced avocado on top.
