Spinach and Orzo Salad

Main Ingredients
- 1 cup Orzo
- 4 cups Fresh Spinach chopped
- 1 cup Cherry Tomatoes halved
- ½ cup Feta Cheese crumbled
- ¼ cup Red Onion finely chopped
- ¼ cup Olive Oil
- 2 tablespoons Lemon Juice freshly squeezed
- 1 teaspoon Dried Oregano
- to taste Salt
- to taste Black Pepper freshly ground
1. Cook the orzo according to package instructions. Drain and let it cool.
2. In a large mixing bowl, combine the cooked orzo, chopped spinach, cherry tomatoes, feta cheese, and red onion.
3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for later.
