Stuffed Green Peppers

- 4 green bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat oven to 375°F (190°C).
Cut the tops off the green peppers and remove seeds.
In a skillet, cook ground beef until browned. Drain excess fat.
Mix cooked beef, rice, diced tomatoes, salt, and pepper in a bowl.
Stuff each pepper with the beef mixture and place in a baking dish.
Bake for 35 minutes. Sprinkle cheese on top and bake for an additional 10 minutes.
