Summer Squash Soup Recipe

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups summer squash, chopped
- 4 cups vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh basil, chopped
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until translucent.
Add chopped summer squash and cook for 5 minutes.
Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and black pepper.
Use a blender to puree the soup until smooth.
Stir in fresh basil before serving.
