Ingredients 

Main Ingredients

  • 1 cup bulgur wheat fine or medium grain
  • 1 bunch parsley finely chopped
  • ½ bunch mint finely chopped
  • 2 medium tomatoes diced
  • 1 small onion finely chopped
  • ¼ cup olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Soak the bulgur wheat in hot water for about 15 minutes, or until tender. Drain and squeeze out any excess water.
  2. 2. In a large mixing bowl, combine the soaked bulgur, chopped parsley, mint, tomatoes, and onion.
  3. 3. Add the olive oil, lemon juice, salt, and black pepper. Mix well to combine.
  4. 4. Taste and adjust seasoning if needed. Serve chilled or at room temperature.
