Ingredients

  • 2 cups Black-eyed peas canned, drained and rinsed
  • 1 cup Corn kernels fresh or canned
  • 1 cup Cherry tomatoes halved
  • 1 cup Bell pepper diced
  • ½ cup Red onion finely chopped
  • ¼ cup Cilantro chopped
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine the black-eyed peas, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
  3. Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
