Main Ingredients
- 2 cups Black-eyed peas canned, drained and rinsed
- 1 cup Corn kernels fresh or canned
- 1 cup Cherry tomatoes halved
- 1 cup Bell pepper diced
- ½ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Salt
- ½ teaspoon Black pepper
In a large mixing bowl, combine the black-eyed peas, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.
Pour the dressing over the vegetable mixture and toss to coat evenly.
Refrigerate for at least 1 hour before serving to allow the flavors to meld.
