Ingredients

  • 2 cucumbers, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon crushed red pepper flakes

Instructions 

  1. 1. In a mixing bowl, combine cucumbers and red onion.
  2. 2. In another bowl, whisk together rice vinegar, sugar, soy sauce, and sesame oil until sugar is dissolved.
  3. 3. Pour dressing over cucumbers and onions. Toss to coat.
  4. 4. Sprinkle with cilantro and red pepper flakes. Serve immediately or chill for later.
