Ingredients 

Salad Ingredients

  • 200 g rice noodles
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • ½ cup chopped cilantro
  • ¼ cup chopped peanuts

Dressing Ingredients

  • ¼ cup lime juice
  • 2 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
  2. 2. In a large bowl, combine the cooked noodles, shredded carrots, sliced bell peppers, chopped cilantro, and chopped peanuts.
  3. 3. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, honey, sesame oil, and minced garlic.
  4. 4. Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate for up to 2 hours before serving.
