Ingredients

  • 2 packs Top Ramen noodles discard seasoning packets
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • ½ cup sliced almonds toasted
  • ¼ cup chopped green onions
  • ¼ cup olive oil
  • 3 tablespoon rice vinegar
  • 2 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil

Instructions 

  1. 1. Cook the ramen noodles according to package instructions, then drain and let cool.
  2. 2. In a large mixing bowl, combine the shredded cabbage, shredded carrots, toasted almonds, and chopped green onions.
  3. 3. In a small bowl, whisk together the olive oil, rice vinegar, soy sauce, honey, and sesame oil to make the dressing.
  4. 4. Add the cooled ramen noodles to the vegetable mixture and pour the dressing over the top. Toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
