Ingredients

  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup yellow wax beans, trimmed and cut into 1-inch pieces
  • 1 cup kidney beans, drained and rinsed
  • ½ cup red onion, thinly sliced
  • ¼ cup parsley, chopped

Dressing

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large mixing bowl, combine the green beans, yellow wax beans, kidney beans, red onion, and parsley.
  2. 2. In a small bowl, whisk together the olive oil, red wine vinegar, sugar, salt, and black pepper.
  3. 3. Pour the dressing over the bean mixture and toss to coat evenly.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
