True Dominican Sancocho Recipe

Main Ingredients
- 1 lb Chicken cut into pieces
- 1 lb Pork cut into pieces
- 1 lb Beef cut into pieces
- 2 cups Yuca peeled and chopped
- 2 cups Plantains peeled and chopped
- 2 cups Potatoes peeled and chopped
- 1 cup Carrots peeled and chopped
- 1 cup Corn cut into chunks
- 1 cup Pumpkin peeled and chopped
- 1 large Onion chopped
- 4 cloves Garlic minced
- 1 bunch Cilantro chopped
- 2 tablespoon Olive Oil
- 1 teaspoon Oregano
- 1 teaspoon Cumin
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 8 cups Water
1. Heat the olive oil in a large pot over medium heat. Add the chicken, pork, and beef. Cook until browned.
2. Add the onion, garlic, oregano, cumin, salt, and black pepper. Cook until the onion is translucent.
3. Pour in the water and bring to a boil. Reduce heat and simmer for 30 minutes.
4. Add the yuca, plantains, potatoes, carrots, corn, and pumpkin. Cook for another 60 minutes, or until the vegetables are tender.
5. Stir in the chopped cilantro and adjust seasoning if needed. Serve hot.
