Turkish Eggs
Turkish Eggs, also known as Cilbir, is a traditional Turkish dish featuring poached eggs served over garlicky yogurt and topped with spicy melted butter.

- 2 Eggs
- 1 cup Greek yogurt
- 1 clove Garlic, minced
- 2 tablespoon Butter
- 1 teaspoon Paprika
- 1 teaspoon Red pepper flakes
- to taste Salt
- to taste Pepper
1. In a mixing bowl, combine Greek yogurt and minced garlic. Season with salt and pepper to taste. Set aside.
2. Fill a saucepan with water and bring it to a gentle simmer. Add a splash of vinegar if desired.
3. Crack the eggs into separate small bowls. Create a gentle whirlpool in the simmering water and gently slide the eggs into the water. Poach for about 3-4 minutes, until the whites are set but the yolks are still runny.
4. While the eggs are poaching, melt the butter in a small pan over medium heat. Add paprika and red pepper flakes, and cook until the butter is sizzling and fragrant.
5. To serve, spread the garlic yogurt on a plate. Place the poached eggs on top of the yogurt. Drizzle the spicy melted butter over the eggs. Serve immediately.
