Ingredients 

Main Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 pieces flour tortillas 8-inch
  • 1 cup vegan cheese shredded
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. 2. Add the diced onion and bell pepper, cook until softened.
  3. 3. Stir in the black beans, corn, cumin, and chili powder. Cook for another 5 minutes.
  4. 4. Remove the mixture from the skillet and set aside.
  5. 5. Wipe the skillet clean and heat the remaining olive oil over medium heat.
  6. 6. Place a tortilla in the skillet, sprinkle with vegan cheese, and add the black bean mixture. Top with another tortilla.
  7. 7. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  8. 8. Repeat with the remaining tortillas and filling.
  9. 9. Cut into wedges and serve warm.
