Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
2. Add minced garlic and ground cumin, cook for another minute.
3. Add black beans, vegetable broth, diced tomatoes, salt, and black pepper. Bring to a boil.
4. Reduce heat and let it simmer for 20 minutes.
5. Use a blender to puree the soup to your desired consistency. You can blend all of it or leave some chunks for texture.
6. Serve hot and enjoy!
