Ingredients 

Main Ingredients

  • 2 cups Black Beans cooked or canned
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. 2. Add minced garlic and ground cumin, cook for another minute.
  3. 3. Add black beans, vegetable broth, diced tomatoes, salt, and black pepper. Bring to a boil.
  4. 4. Reduce heat and let it simmer for 20 minutes.
  5. 5. Use a blender to puree the soup to your desired consistency. You can blend all of it or leave some chunks for texture.
  6. 6. Serve hot and enjoy!
