Ingredients 

Main Ingredients

  • 1 lb Beef stew meat cut into bite-sized pieces
  • 2 tablespoon Olive oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef broth
  • 2 cups Water
  • 2 Carrots sliced
  • 2 Celery stalks sliced
  • 2 Potatoes diced
  • 1 can Diced tomatoes 14.5 oz can
  • 1 cup Green beans cut into 1-inch pieces
  • 1 cup Corn kernels
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  2. 2. Add chopped onion and minced garlic to the pot. Cook until onions are translucent.
  3. 3. Pour in beef broth and water. Bring to a boil.
  4. 4. Add carrots, celery, potatoes, diced tomatoes, green beans, and corn. Stir well.
  5. 5. Season with dried thyme, dried basil, salt, and black pepper. Reduce heat and simmer for 1 hour.
  6. 6. Taste and adjust seasoning if needed. Serve hot.
