  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 pieces Taco shells
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Shredded cheese
  • 0.25 cup Sour cream

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add chickpeas, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally.
  3. 3. Warm taco shells according to package instructions.
  4. 4. Fill taco shells with chickpea mixture, then top with shredded lettuce, diced tomatoes, shredded cheese, and sour cream.
