Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable broth

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and chopped bell pepper, cook for another 5 minutes.
  4. Add diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and black pepper. Stir well to combine.
  5. Pour in vegetable broth and bring the mixture to a boil.
  6. Reduce heat to low and let simmer for 20 minutes, stirring occasionally.
  7. Serve hot, garnished with your favorite toppings.
