West African Peanut Stew Recipe

Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Ginger, minced about 1 inch piece
  • 1 lb Sweet Potatoes, peeled and cubed
  • 1 can Diced Tomatoes 14.5 oz can
  • 4 cups Vegetable Broth
  • ½ cup Peanut Butter natural, unsweetened
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • ¼ teaspoon Cayenne Pepper optional
  • 1 Salt and Pepper to taste
  • 1 bunch Collard Greens, chopped or spinach
  • 1 Lime, cut into wedges for serving

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger, cook for another 2 minutes.
  3. Stir in the sweet potatoes, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add the peanut butter, cumin, coriander, and cayenne pepper. Stir well to combine and simmer for another 15 minutes, or until the sweet potatoes are tender.
  5. Season with salt and pepper to taste. Stir in the collard greens and cook until wilted, about 5 minutes.
  6. Serve hot with lime wedges on the side.
