White Bean Soup Recipe
A hearty and comforting white bean soup, perfect for chilly days.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans white beans, drained and rinsed (15 oz each)
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 2 cups kale, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the white beans, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil.
Reduce heat and let it simmer for about 30 minutes.
Add the chopped kale and cook for another 10 minutes.
Serve hot and enjoy!
