Main Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 cups grated zucchini
- 1 cup crushed pineapple, drained
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, combine flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
In another bowl, mix zucchini, pineapple, oil, eggs, and vanilla.
Add wet ingredients to dry ingredients and stir until just combined.
Pour batter into the prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
