Ingredients

  • 4 tablespoon Butter
  • 1 cup Chopped Onion
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery
  • ¼ cup All-purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Milk
  • 1 cup Beer
  • 2 cups Shredded Cheddar Cheese
  • 1 teaspoon Worcestershire Sauce
  • ½ teaspoon Dry Mustard
  • to taste Salt and Pepper

Instructions 

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until tender.
  3. Stir in flour and cook for 2 minutes.
  4. Gradually whisk in chicken broth and milk. Bring to a boil.
  5. Reduce heat and add beer. Simmer for 10 minutes.
  6. Stir in cheese, Worcestershire sauce, and dry mustard until cheese is melted.
  7. Season with salt and pepper to taste. Serve hot.
