Broccoli and Stilton Soup

Main Ingredients
- 1 head Broccoli chopped
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 liter Vegetable stock
- 150 grams Stilton cheese crumbled
- 100 ml Double cream
- to taste Salt
- to taste Black pepper
1. Heat a large pot over medium heat and add a splash of oil.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the chopped broccoli and vegetable stock. Bring to a boil, then reduce heat and simmer for 15 minutes.
4. Blend the soup until smooth using a blender or immersion blender.
5. Stir in the crumbled Stilton cheese and double cream. Season with salt and black pepper to taste.
6. Serve hot with a sprinkle of extra Stilton on top if desired.
