Instructions
Heat olive oil in a large pot over medium heat. Add beef chunks and brown on all sides. Remove beef and set aside.
In the same pot, add chopped onion and minced garlic. Sauté until onion is translucent.
Return beef to the pot. Add beef broth, red wine, tomato paste, oregano, thyme, bay leaves, salt, and pepper. Stir well.
Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.
Add potatoes and carrots. Continue to simmer for another 30 minutes, or until vegetables are tender.
Remove bay leaves before serving. Enjoy your Greek Style Beef Stew!
