Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Fresh spinach
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ cup Heavy cream optional

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add fresh spinach and cook until wilted.
  5. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Use a blender to puree the soup until smooth.
  7. Return the soup to the pot, stir in salt, pepper, and optional heavy cream. Heat through.
  8. Serve hot.
