Main Ingredients
- 1.5 cups All-purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon Ground cinnamon
- 0.5 teaspoon Salt
- 0.25 teaspoon Baking powder
- 1 cup Granulated sugar
- 2 Large eggs
- 0.5 cup Vegetable oil
- 1 teaspoon Vanilla extract
- 1.5 cups Grated zucchini
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, cinnamon, salt, and baking powder.
In another bowl, beat the sugar and eggs until smooth. Add the oil and vanilla extract and mix well.
Stir the dry ingredients into the wet mixture until just combined. Fold in the grated zucchini.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
